Q: Do you have any great ground beef recipes?
I make Shepherd's Pie and, of course, meatloaf and chili, but I'd like to do something different. Maybe something Tex-Mex or a new type of casserole.
A: Mexican style beef casserole recipe
Recipe ingredients:
* 1 1/2 pounds lean ground beef
* 2 tablespoons vegetable oil
* 1 medium onion, chopped
* 1 cup chopped tomatoes or 1, 8 ounce, can tomato sauce
* 1/3 cup chile sauce
* Salt, to taste
* Freshly ground pepper, to taste
* 12 corn tortillas, cut into quarters
* 1/2 cup red taco sauce
* 3 cups shredded Monterey jack cheese
* 1 cup sour cream
* 2, 10 ounce, packages frozen chopped spinach, thawed and well drained
Recipe method:
* Preheat oven to 375 degrees F.
* In a large skillet brown the beef.
* Pour off any fat and remove beef. Set aside.
* Add oil to skillet and saute onion until limp and golden.
* Return beef to skillet and add tomatoes, chili sauce, salt and pepper.
* Dip tortilla quarters in taco sauce, covering both sides.
* Cover bottom of a buttered 3 quart casserole with half the tortilla pieces, slightly overlapping.
* Spread beef mixture over tortillas.
* Sprinkle beef with 1 1/2 cups of the cheese.
* Layer remaining tortilla pieces on top and spread with sour cream.
* Sprinkle on the spinach and top with remaining cheese.
* Bake, covered, for 30 minutes, uncovering for the last 15 minutes.
* If reheating, have the casserole at room temperature and bake at 375 degrees F, uncovered, until hot and bubbly.

Bacon Cheeseburger Roll-Up
1 lb. lean ground beef
4 slices OSCAR MAYER Bacon, chopped
1/2 cup chopped onions (about 1 small)
1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
1 pkg. (13.8 oz.) refrigerated pizza crust
PREHEAT oven to 400°F. Cook ground beef, bacon and onions in large skillet on medium-high heat until ground beef is evenly browned, stirring occasionally. Drain; return meat mixture to skillet. Add VELVEETA; cook until completely melted, stirring frequently. Cool 10 min.
UNROLL pizza dough onto baking sheet sprayed with cooking spray. Press into 15x8-inch rectangle. Top evenly with meat mixture. Roll up dough, starting at one of the long sides. Rearrange, if necessary, so roll is seam-side down on baking sheet.
BAKE 20 to 25 min. or until golden brown. Cut diagonally into six slices to serve.
Q: I am dire need of some creative and good ground beef recipes. I am sooo tired of the same stuff.?
Anyone have anything other than: stuffed cabbage and stuffed peppers, stroganoff, meatloaf, meat sauce, meatballs, meatball stew, noodles and beef, burgers, burritos and enchiladas? I just can't seem to find anything different and personally i would not even buy beef but my kids will kill me. ha ha ha. Thank you!!

A: WOW!! What a nice friend!! Hope you have a big family. ;)
You can start by making meatballs....easy to do this in large batches, and they freeze really well. You can eat your first batch for X-Mas Eve, or New Years Eve! Also, if you just freeze them plain, as-is, then you can take them out for quick dinners throughout the year...like spaghetti and meatballs in tomato sauce, Swedish meatballs in a white sauce over mashed potatoes, etc.
You could also do hamburger patties, freeze them, and just take them out as you need them.
Or fry some up with onion and have it ready anytime you need to throw together a quick hotdish.
There are a million things you can do with ground beef.
If the 50 lbs aren't already broken down into 1 or 2 lb bags, I would do that and freeze the rest uncooked, thawing as you need to.

PS - I just thought of another thing you can do that my sister did when they got all this beef from her Father-In-Law...
She bought 10 packs of taco seasoning, fried up 10 lbs of beef with some onion, added the seasoning and cooked according to package directions. Then she seperated it back into 1 lb packs and stuck it in the freezer for later use. She and her family (husband and two teens) could pull it out any time for a plate of quick nachos or a fast taco supper when things got really hectic!!

Hearty Six-Can Chili
Ingredients:
1 pound lean (90%) ground beef
1/2 cup chopped onion
2 cans (15 1/2 ounces each) chili beans in sauce, undrained
2 cans (14 1/2 ounces each) diced tomatoes, undrained
1 can (15 ounces) black beans, drained and rinsed
1 can (10 3/4 ounces) condensed cream of mushroom soup
1 teaspoon chili powder
Directions:
1.Place ground beef and onion in Dutch (6-qt.) Oven. Cook and stir over medium heat 8-10 minutes or until beef is no longer pink, breaking beef into small crumbles. Drain, if necessary.
2.Open chili beans, tomatoes, black beans and soup using Smooth-Edge Can Opener. Drain and rinse black beans.
3.Add all ingredients including chili powder to meat mixture in Dutch Oven. Bring to a boil; reduce heat and simmer, covered, over low heat 30 minutes, stirring occasionally.
Yield: 8 servings

I have picky eaters to feed so nothing out of the ordinary and i want to steer clear or spicy food and oriental foods. I obviously have my work cut out for me. lol
A: Ground beef can go in taco meat. Make small meatballs, brown them in the oven or in a skillet and add them to beef vegetable soup instead of the beef. Make a shepard's pie: brown the meat with onions, salt and pepper, beef gravy add thawed frozen peas, put in baking dish and cover with left-over mashed potatoes. Add a little cheddar cheese on top.

A: GROUND BEEF STROGANOFF
1 pound ground beef, lean
1 small onion, chopped
1/2 teaspoon garlic salt
1/4 teaspoon pepper
10 3/4 ounces cream of mushroom soup, condensed
4 ounces mushroom stems and pieces, drained
3/4 cup sour cream, or yogurt
In medium skillet, brown ground beef and onion; drain excess fat. Stir in garlic salt, pepper, soup and mushrooms. Simmer covered, 15 to 20 minutes. Stir in sour cream; heat through, but do not boil. Serve over rice, noodles or chow mein noodles.
GROUND BEEF AND RICE CASSEROLE
1 lb. ground beef
1 c. rice
1 (10 3/4 oz.) can cream of chicken soup
1/4 c. celery
1/4 c. green pepper
1/4 c. onion (optional)
1/2 tsp. black pepper and salt
1/2 c. mild Cheddar cheese
Brown ground beef with salt and pepper. Cook rice. Saute celery, green pepper, onion. Preheat oven 350-375 degrees. In medium baking dish, combine all ingredients. Mix well. Bake 30-35 minutes.

A: Gosh, ground beef is such a versatile product, there's a ton of stuff you can make. Depending on what you have in your pantry, here are some suggestions:
1. Sloppy Joes: add tomato sauce or ketchup to sauteed ground beef, along with chopped onion, mustard and salt and pepper.
2. Ground beef stroganoff: Add flour to browning meat as well as milk and stir to thicken. Add sour cream, salt, pepper, and sliced mushrooms (canned or fresh. If fresh, saute with beef). If you have mushroom soup instead of mushrooms, add that to the mixture and enough milk to desired thickness. Serve over egg noodles.
3. Stuffed bell peppers: Saute beef with chopped onion and garlic and add to cooked rice. Season with salt, pepper, oregano or Italian spices, and some red pepper flakes. Add a can of diced tomatos and place in bell peppers. Top with cheese, cover and bake until peppers are tender.
4. Make "steaks" out of seasoned patties and simmer in mushroom gravey. Serve over mashed potatos
5. Add to sauteeing beef some chopped spinach and cream cheese. Season to taste and serve over rice.
6. Spaghetti!

A: A savory ground beef and sauerkraut mixture baked between two layers of crescent roll dough, in the style of bierock pastries. This is almost as good as the orginal bierock, but is a lot less time consuming
1/2 cup chopped onion
1 1/2 pounds lean ground beef
1 (16 ounce) can sauerkraut, drained and pressed dry
2 (8 ounce) cans refrigerated crescent rolls
1 (8 ounce) package shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Brown onion and ground beef in a large skillet over medium high heat; drain extra fat out of skillet, then stir in drained sauerkraut. Heat through and set aside.
Press 1 package of crescent roll dough into the bottom of a lightly greased 9x13 inch baking dish. Spread beef mixture on top, then lay 2nd package of crescent roll dough over the top of the beef mixture. Press dough seams together and sprinkle all with cheese.
Bake in preheated oven for 25 to 30 minutes, or until golden brown.

A: Mama's Cheesy Meatloaf
1 lb. ground chuck
1 egg, beaten
2 tbls. worcestershire sauce
1 cup ketchup
1/2 tsp. onion salt
3/4 stack Town House or Ritz Crackers, crushed
2 cups grated cheese (I like sharp)
Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.
Sauce:
½cup ketchup
¼ cup mustard
¼ cup brown sugar
Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.

3/4 pound ground turkey breast
3/4 pound ground round
1/3 cup dry breadcrumbs
2 large egg whites
Cooking spray
3/4 cup water
3 tablespoons tomato paste
2 tablespoons Madeira wine or dry sherry
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon freshly ground black pepper
1 (10 1/2-ounce) can condensed French onion soup (such as Campbell's)
Combine first 4 ingredients. Divide meat mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add patties; cook 6 minutes or until browned, turning after 3 minutes. Remove patties from pan; keep warm. Stir in water and remaining ingredients. Bring to a boil; add patties. Cover, reduce heat, and simmer 10 minutes. Uncover and cook until wine mixture is reduced to 3/4 cup (about 10 minutes).
Yield: 6 servings (serving size: 1 patty and 2 tablespoons sauce)

Hawaiian Meatballs
~Meatballs~
1 pound ground burger
1/2 teaspoon salt
1/4 teaspoon ginger
Mix together and form into balls and dip into a mixture of 1 egg and 1 teaspoon water. Then dip into flour. Saute in vegetable oil until brown and done.
~Hawaiian Sauce~
1 (16-oz) can pineapple chunks
1/4 cup brown sugar
2 TBS cornstarch
1/4 cup vinegar
2 TBS soy sauce
1 green and 1 yellow bell pepper, cut into strips
Drain pineapple and add water to syrup to make 1 cup.
After removing meat balls from pan, add syrup to drippings, stir in brown sugar mixed with cornstarch, vinegar and soy sauce.
Heat and stir until thickened. Return meatballs to sauce and then peppers and pineapple, stirring to coat. Cover and simmer 10 minutes.
Keep in crockpot on low to medium and stir often. Serve over rice or with long toothpicks as a fingerfood.

Swedish Meatballs in Sauce
1 (1 lb.) pkg. frozen plain meatballs (not the Italian kind)
1 can cream of mushroom soup
1 can French onion bouillon (or 1 cup beef bouillon)
1 cup sour cream
1 tsp. Worcestershire sauce
1 dash Tabasco sauce
1/4 cup milk
Cracked black pepper
Mix sauce ingredients together and mix in meatballs. Cook on low until heated through. Serve w/ toothpicks as an appetizer, or serve as an entree over noodles or rice.

Use your HB meat instead of pork in this recipe:
PORK AND GINGER POTSTICKERS
2 cups chopped napa cabbage
1/2 tablespoon salt
1/2 pound ground pork (Don't get lean pork, the fat is good for juicy and flavorful dumplings)
2 tablespoons minced ginger
1 1/2 tablespoons minced garlic
2 tablespoons thin soy sauce
3 tablespoons sesame oil
1 egg
Round wonton wrappers
1 to 2 cups chicken stock or water
Sprinkle cabbage with the 1/2 tablespoon of salt and let stand for 30 minutes. Place the cabbage on a clean dishtowel or cheesecloth and squeeze out any water. The dryer the cabbage the better. In a large bowl thoroughly mix the cabbage with all of the other ingredients, except the chicken stock. Cook a tester to check the seasoning.
MAKING THE DUMPLINGS: Place a small mound of filling in the middle of the wrapper. (Be very careful not to touch the edges with the filling as this will impede proper sealing of the dumplings. Nothing is worse than dumplings breaking during cooking.) Fold the wrapper in half to form a half moon shape. Starting on one end fold/pinch the wrapper tightly together. Proceed with this fold/pinch method until the dumpling is completely sealed. There will be approximately 10 to 14 folds per dumpling. Rest the dumplings with the folded edges straight up.
COOKING THE DUMPLINGS: In a hot saute pan coated well with oil, place pot stickers flat side down and cook until the bottom is browned. Have pan cover ready and add 1 cup of chicken stock, cover immediately. Be careful, the liquid will splatter! The stock will steam the pot stickers. Check them in

A: Taco Appetizer Platter
1-1/2 pounds ground beef
1/2 cup water
1 envelope taco seasoning
2 packages (8 ounces each) cream cheese, softened
1/4 cup milk
1 can (4 ounces) chopped green chilies, drained
2 medium tomatoes, seeded and chopped
1 cup chopped green onions
1-1/2 cups chopped lettuce
1/2 to 3/4 cup honey barbecue sauce
1 to 1-1/2 cups shredded cheddar cheese
Corn chips
Directions:
In a large skillet, cook beef over medium heat until no longer pink; drain. Add water and taco seasonings; simmer for 5 minutes.
In a large bowl, combine cream cheese and milk; spread on a 14-in. serving platter or pizza pan. Top with meat mixture. Sprinkle with chilies, tomatoes, onions and lettuce. Drizzle with barbecue sauce. Sprinkle with cheddar cheese. Serve with corn chips.
