2 boneless chicken breasts

dash pepper
1 teaspoons oil
1/4 cup chicken broth
1 teaspoon minced garlic
1 teaspoons lemon juice
1/2 teaspoon butter
Heat oil in a skillet. Add salt and pepper to the chicken to taste, and fry the breasts in the oil about 5 min per side. Put the chicken onto a plate. Now put the broth, garlic, lemon juice and butter into the pan and heat for 2 minutes. Add the chicken back in, flip, and serve.
This is GREAT with steamed broccoli!

A: Apricot Lemon Chicken
4 (3 ounce) chicken breasts (skinless and boneless)
1 cup water packed apricots
2 tablespoons Dijon Mustard
3 tablespoons lemon juice
Place chicken in baking pan or casserole dish. In blender, blend apricots until smooth. Add mustard and lemon juice. Pour over chicken and bake at 350 degrees for 40 minutes. Baste and bake uncovered for 10 minutes more.
Makes 4 servings.

Spinach and Chicken Skillet
6 boneless skinless chicken breast halves (1 3/4 pounds)
1 cup fat-free (skim) milk
1/2 cup fat-free chicken broth
1 medium onion, chopped (1/2 cup)
1 bag (10 ounces) washed fresh spinach, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
Remove fat from chicken. Spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Cook chicken in skillet 2 minutes on
each side; reduce heat to medium-low.
Stir in milk, broth and onion. Cook about 5 minutes, turning chicken occasionally, until onion is tender.
Stir in spinach. Cook 3 to 4 minutes, stirring occasionally, until spinach is completely wilted and juice of chicken is no longer pink when centers of thickest pieces are cut. Remove chicken from skillet; keep warm.
Increase heat to medium. Cook spinach mixture about 3 minutes or until liquid has almost evaporated. Stir in salt, pepper and nutmeg. Serve chicken on spinach.

3 1-1/2-inch pieces of cinnamon stick
10 whole cloves
8 whole cardamom pods
3 dried red chilies
1 Tbsp. fresh, grated ginger
8 chicken thighs, skinned
1 14-oz. can coconut milk
salt to taste
Over high heat in a medium-sized heavy pot, heat the oil. Add the peppercorns, cinnamon, cloves, cardamom and red chilies. Stir until the cardamom darkens slightly. Add the ginger, give a few stirs and add the chicken and coconut milk. Salt very lightly. Add enough water to just cover the chicken pieces. Bring to a boil, turn down to a simmer and cook uncovered for 40 minutes. The sauce will have thickened slightly. Season to taste. Try it with a squeeze of lime.

Q: Low carb already grilled chicken recipes?
I have a grilled chicken breast that I want to use tomorrow for lunch, but I am sick of the same old chicken ceaser salad, and chicken wraps, etc. So what are some good low carb options that I can make?
A: Take either whole wheat bread, or maybe rye if you prefer that.
Some tomato, onion if you like (red onion is best), Alfalfa sprouts (really!). Cheese of your preference, possibly even a spicy monterey jack cheese.
Maybe some spicy southwestern mayo, to keep the carbs down. Things like blue cheese and whatever, although yummy, rack them up. Or maybe no mayo at all.
Assemble it (slicing the breast, perhaps), with toasted bread perhaps, or maybe grilling the sandwich on a skillet with some butter.
I think you'll be pleasantly surprised.

A: get a bowl with 1 cup 1%milk, and 2 eggs, stir well. Soak your chicken breasts in mixture. On a plate place whole wheat flour and season as desired. Get skillet warm with canola oil. Dip chicken into flour and fully cover, and fry in skillet and there you go.

A: i love to take chicken breasts and cover them really good in fat free italian salad dressing and let them set in the fridge over night then throw them on the grill or in the oven the next day. mmmm they are so juicy and loaded with flavor and guilt free!!

I want to make a chicken casserole but i want it to be a very low carb dinner.
A: Instead of pasta, throw the chicken in your casserole dish with a bag of specialty frozen veggie mix. You know what veggies your family and/or friends like best. Get a mix with those in it. You can get all sorts of special mixes nowadays in most grocery stores. When it's nearly done, top with grated cheese.
Cut the chicken into bite-sized pieces and brown in a skillet that's been sprayed with non-stick spray. Season to taste. I like a combination of salt, pepper, onion, and garlic. You can add a little water while it's cooking if it starts to stick. Be sure the chicken is done, then mix it with the frozen veggies and pile it into your casserole pan. Bake at 350 degrees Fahrenheit about 30 min, then top with grated cheese and bake 10-15 min more. Yummers!

A: I came up with maki sushi that doesn't use rice. I made it for people who were doing low carb as well as "normals" and both groups loved it. :)
Ingredients:
Nori seaweed wrappers
Carrots
Zuchinni
Daikon (lo bak)
Cauliflower
Sesame Oil
Mirin
Toasted sesame seeds
Fillings of your choice (smoked salmon, tuna, shrimp, crab, avocado, sliced marinated shiitaki mushrooms, etc.)
Method:
Grate the carrots, zuchinni, and daikon but keep them seperated. Sprinkle a bit of sesame oil, mirin and sesame seeds into each dish and toss until the veggies are coated. Set aside.
Boil the cauliflower until very, very tender. Drain. Puree. Set aside.
Prepare the fillings of your choice. I used avocados, shiitaki mushrooms (which I marinated in a bit of teriyaki sauce) shrimps, crab and salmon for the sushi I made.
Now for the fun bit!
Place a sheet of nori on bamboo sushi roller mat or piece of plastic wrap. Place either the grated carrot, zuchinni, daikon, OR pureed cauliflower on about 1/2 of the nori. Then put in filling of choice. Once filled, roll into a tube, seal edges with a bit of water and then slice into 6 slices.
These are the combos I used:
Grated carrot w/ marinated shiitaki mushrooms
Grated zuchinni and carrot w/ crab and avocado
Pureed cauliflower w/ salmon (I mixed wasabi in with the cauliflower puree for extra flavour)
Daikon and carrot w/ shrimps
Zuchinni, avocado and crab
Cauliflower puree w/ shiitaki mushroom and grated carrot

I use chicken a lot, but I want to experiment with other foods and meats. Any suggestions or recipes?
A: Buy some whole wheat pita bread, the kind that is not cut in half. Brown some lean ground beef and drain it well. Spread some fat free spaghetti sauce on your pita bread. Put some of the ground beef on it and whatever other toppings you like on a "pitza". Top with fat free or low fat mozzerella cheese. Bake in a 400 degree oven til cheese is melted and the pita is just starting to get crisp.
I have 2 daughters and when we make this, I put a variety of toppings, such as green peppers, onions, mushrooms, jalapenos, etc., in bowls and let everyone make their own to their liking. We also use chicken breast instead of ground beef sometimes. Use your imagination and see what you come up with.

A: Amaretto Dip With Strawberries
2/3 cup nonfat strawberry yogurt
1/10 cup whipped fat-free topping (such as Cool Whip)
1/10 cup amaretto
2/3 quart fresh strawberries
Blend yogurt with amaretto. Top with whipped topping. Serve in a bowl with strawberries surrounding the dip. 4 servings

Almond Spiced Chicken
1 tsp Margarine, 80% fat, unsalted, tub
1/4 cup sliced almonds, chopped
2 tsp curry powder, divided
1 cup chopped apples, unpeeled, diced
1/2 cup fresh chopped onion
1/2 cup fresh mushroom slices
1 tbsp white all purpose flour
1 tsp chicken bouillon
1 cup water, boiling
1/2 cup fat free milk
1 tbsp fresh lemon juice
1 cup cooked chicken breast, diced
Directions
1 In a large skillet, melt margarine over medium heat. Add almonds and cook for about 10 minutes, or until they are golden brown. Stir often.
2 Sprinkle with 1 teaspoon of the curry powder, and then toss them lightly to coat. Then, drain the almonds on paper towels.
3 Sauté the apple, onion, and mushrooms in the same skillet for 5 minutes. Stir in the remaining 1 teaspoon of curry powder and the flour. Stirring frequently, cook over low heat for 2 minutes.
4 After dissolving the bouillon granules in the boiling water, add the broth to the skillet with the milk and lemon juice.
5 Constantly stirring, continue to cook over low heat until the mixture has become smooth and thickened, roughly 5 minutes.
6 Add the chicken, and then continue to cook over low heat until it has heated thoroughly.

2 lb chicken breast fillets, cut 1 strips
1 tsp cumin
1/2 tsp dried coriander
1/2 tsp dried ginger
1/4 tsp red-pepper flakes, (optional)
4 garlic cloves, finely chopped
1/2 cup chicken stock
1/3 cup heavy cream
1 tbsp chopped fresh cilantro or parsley
Instructions:
Heat butter in a heavy casserole over medium-high heat until foam from
butter subsides. Add chicken strips and cook in batches until browned, 5
minutes per batch. Add cumin, coriander, ginger, red-pepper flakes (if
using) and garlic and cook, stirring occasionally, 2 minutes. Add chicken
stock and bring to a boil.
Reduce heat to medium-low; simmer, stirring occasionally, 5 minutes.
Slowly add heavy cream and simmer (do not let mixture come to a boil) until
heated through, 3 minutes.
Transfer chicken and sauce to a serving plate. Garnish with cilantro.
This recipe yields 4 servings.

3 tablespoons (45mL) Mrs. Dash® Chicken Grilling Blend
4 (1 pound/454g) boneless, skinless chicken breast halves
Olive oil spray
3 tablespoons (45mL) Parmesan cheese, grated
3 tablespoons (45mL) light mayonnaise
6 cups (1.5L) romaine lettuce leaves
1/2 cup (120mL) plain dry croutons
1 tablespoon (15mL) Mrs. Dash Garlic and Herb Seasoning Blend
1/4 cup (60mL) olive oil
Preheat grill to medium high. Spray chicken with olive oil spray and roll in Mrs. Dash® Chicken Grilling Blend until well coated. Cook on grill for 5 minutes, turn and cook for another 5 minutes or until juices run clear when pierced. Remove from grill and cool; cut into short strips and set aside. Combine Mrs. Dash® Garlic and Herb Seasoning Blend with olive oil and mayonnaise, add lettuce and toss. Place chicken and croutons on lettuce. Garnish with Parmesan cheese.
