Q: does anyone have the recipe for macaroni grill's penne with oven roasted chicken?
i love this meal and would really like to know how to make it.... i know it has penne, grilled chicken, sundried tomatos, bufflow mozzar. cheese, aspa., and that the sauce is garlic olive oil.... but am i missing anything... and how do they make that sauce??? please let me know. thank you!

Romano's Macaroni Grille Penne Rustica GRATINATA SAUCE 3 tablespoons butter 2 tablespoons minced garlic 3 tablespoons marsala wine 2 cups heavy cream 1 cup grated parmesan cheese 1/2 cup milk 1/2 cup chicken broth 1 tablespoon cornstarch 1 tablespoon Grey Poupon Dijon Mustard 2 teaspoons minced fresh rosemary 1/2 teaspoon salt 1/2 teaspoon minced fresh thyme 1/4 teaspoon ground cayenne pepper 1 lb penne rigate, cooked 12 medium shrimp, peeled and deveined 2 skinless chicken breasts 1/2 cup about 2 ounces thick-sliced prosciutto, chopped TOPPING 3 tablespoons grated parmesan cheese 1 1/2 teaspoons paprika GARNISH 12 sliced pimientos 4 sprigs rosemary Preheat bbq grill to high. Prepare gratinata sauce by melting 3 tbls of butter over medium/low heat. Add garlic and sweat it for about 5 minutes. Be sure the garlic doesn't brown. Add the marsala wine and cook for another 5 minutes. Add the remaining ingredients for the sauce and whisk until smooth. Bring mixture to a simmer and keep it there for 10 minutes or until it's thick. Cover sauce and remove from heat. Cook past following directions on the package (7-9 minutes in boiling water). You want the pasta tender, but not mush (al dente). Strain pasta and set it aside when it's done. Pound the thick end of your chicken breast a bit with a kitchen mallet to make them a uniform thickness. Rub chicken with olive oil, then sprinkle on a bit of salt and pepper. Spear the shrimp on skewers (6 per skewer should work fine), then rub them with oil, and sprinkle with salt and pepper. Grill chicken for 5 to 6 minutes per side. Grill shrimp for 2 minutes per side. When chicken is done, slice each breast into strips. Preheat oven to 500 degrees. Build each dish in a large shallow baking dish. Or you can use a 9 inch glass or ceramic pie plate. Load 3 cups of pasta into each baking dish. Add one quarter of the chicken, 3 shrimp, and 2 tbls of prosciutto onto each serving. Spoon 3/4 of a cup of gratinata sauce on each serving and toss to coat. Combine 3 tbls of grated Parmesan cheese with 1 1/2 tsp paprika, then sprinkle about 1 tbls of this mixture over the top of each serving. Bake the dishes for 10-12 minutes, or until tops begin to brown. Arrange 3 pimentos on the top of each serving, then jab a sprig of rosemary into the center an serve. Q: help me cook a frozen chicken in the oven? any ideas or recipes?
i forgot about this chicken i had in the freezer for a couple of months and i want to eat it today. I have it out side letting it thaw. So anyone have any tips or recipes that i can do like how do i cook it in the oven so i get a nice roasted chicken or what kind of things i need to do to it so its perfect and a good meal

A: uh, to get it to thaw quickly immerse it in cold water and let the tap run over it. This is by far the safest and quickest aside from nuking it in the microwave in the defrost setting. Outside is a haven for bacteria, esp if it is sitting in the sun.EW.

I am looking for Tyler Florence's Oven Roasted Turkey Breast with Homemade Cornbread Stuffing recipe. AOL has the video and step by step recipe, but the full written out recipe with the ingredients is wrong(They give some chicken recipe). The foodnetwork does not have it and only gives a link to AOL which does not help since the recipe is wrong on AOL. Does anyone have the recipe they can me. And I repeat, it's not on foodnetwork!!!!! It's on AOL, but the recipe is wrong, and I have tried to contact them many times but never have gotten through because the emails come back as undeliverable. Please do not give me links to a recipe for roasted whole turkey or cornbread stuffing because this is a Turkey Breast you put the stuffing in and roll it and tie, then sear and then roast so the cooking times and temps are different. A: You are so right! But this is all I could find for you. Oven Roasted Turkey Breast and Cornbread Stuffing Begin by making cornbread stuffing. Melt half the butter in a pan over medium heat and toss in apple cubes. Cook for approximately 2 minutes until apples are a light brown and then set aside in large bowl. In the same pan melt remaining butter and add rosemary and sweet Italian sausage. While cooking, break up Italian sausage and cook until lightly browned, then add onions and continue cooking for 10 minutes until soft and golden. Add sausage mixture to apples in large mixing bowl, along with cornbread pieces. Season well with salt and pepper, and give it a good toss until well combined. In a separate bowl whisk together egg, cream and stock, and pour that over cornbread. Stir stuffing together and set aside in refrigerator. Now begin to butterfly turkey breast. Use a sharp, thin knife to cut down the length of turkey breastbone to remove the breast. Cut breast parallel to the board, almost in half, just stopping short of the outside edge. Open out the two halves as if you were opening a book. Now you?ve got a large piece of meat that will cook evenly and is thin enough to roll. Lay turkey breast flat. Sprinkle cut surface of the turkey with salt and pepper and then spread out the stuffing ½ inch away from edge so the breast can be rolled and tied. Start with left side and roll turkey over filling and into a cylinder. Tuck in ends if you need to contain stuffing. Then, using four pieces of kitchen twine, tie turkey in four places and season all over with salt and pepper. In a large roasting pan heat three tablespoons of olive oil until smoking hot. Put turkey in roasting pan and sear all over. When seared, transfer pan to oven and roast for about 20 minutes. (Test with meat thermometer; internal temp should reach 160 F). I'm trying to find a cookbook that has lots of easy, simple, and good recipes. I'm tired of seeing recipes with a bunch of weird titles like "Best Butterball Brownies" or "Cajun Chilled Chicken." I just want a recipe that has straightforward simple recipes like basic recipes for things, like "oven roasted chicken" or "homemade brownies" none of that other mumbo-jumbo. I know sometimes the cookbook authors just make the names up but sometime the recipes are really out there too. Any ideas on a great simple cookbook?

A: "America's Test Kitchen" is what you need! It's a show on public television, but they have many cookbooks & really, really good simple recipes. I cook everything from scratch with their recipes, and they're so easy to follow & straightforward. Q: I am baking two items in my oven. One recipe calls for 400 degrees the other calls for 450.?
I am making oven roasted potatos and breaded chicken breasts. The potato recipe calls for the oven to be set at 450 degrees and the chicken calls for 400 degrees. I preheated the oven to 400 degrees, knowing it will take the potatos longer to roast. The recipe calls to roast them for 35 mins. How much longer should I let them cook to compensate for the cooler oven?

A: Doneness (yeah I know that is not a word :) of potatoes really depends on the size of the potato and your preference. Some people like potatoes a little firmer than others. So when you take your chicken out stick a fork in one of the potatoes and decide for yourself. If you can't tell with a fork, eat one but do remember it will be VERY HOT. Cooking "by feel" will teach you to be a very good cook. Somethings you just can't cook with a timer..

Q: Roasting a whole chicken in the oven?
Anybody have a good way of or recipe for roasting a whole chicken in the oven? I have a roasting pan with a rack in it the middle of it that I can use. Thanks.

A: Use your rack and butter your chicken breast and legs add seasoning don't stuff the chicken but cover with foil cook in a med to hot oven and allow 20Min's per lb plus another 20 Min's on top. remove the foil for the last 30 Min's to allow the bird to brown. good luck. PS take care when handling raw meat put it straight on the rack before buttering use a spoon to smooth on the butter and don't return the spoon to the butter if you need more use another clean spoon.

A: I love this recipe because not only do you have your seasonings all over the chicken, but inside as well. Orange Herb Roasted Chicken INGREDIENTS 1 cup chicken broth 1 (4 pound) whole chicken, rinsed and patted dry 1/2 cup butter, cut into 1 tablespoon sized pieces 2 navel oranges, halved salt and pepper to taste 2 cloves garlic, minced 1/2 cup butter, melted 2 sprigs fresh rosemary 2 sprigs fresh thyme 2 sprigs fresh sage DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Pour the chicken broth into a small roasting pan, and set aside. Loosen the skin from the breasts and thighs of the chicken. Stuff the butter pieces evenly underneath the skin of the chicken, and place into the roasting pan. Squeeze the orange halves over the chicken, and stuff the orange halves into the chicken cavity. Tie the legs together with kitchen twine. Sprinkle the chicken with salt and pepper to taste, then rub in the minced garlic. Drizzle the melted butter all over the chicken, then lay the herb sprigs onto the breast and around the legs. Cover the dish with aluminum foil, and bake in the preheated oven for 20 minutes. Uncover and baste the chicken with the pan juices. Continue cooking until the chicken is no longer pink, or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F (74 degrees C), 1 to 2 hours. Baste the chicken every 10 to 15 minutes after you uncover it. Once cooked, allow the chicken to rest out of the oven for 10 minutes before slicing.

Q: I want a recipe for roasting chicken in a microwave?
I asked earlier for a simple roast chicken recipe... i got many fabulous recipes, but all were using the oven.. i only have a mini microwave.. it has only these function : HI, LO, DEFROST, BRAISE, SIMMER, REHEAT. Can anyone give me a roast chicken recipe for this microwave?

A: I do it all the time here is my recipe. Take the chicken and wash/rinse out with water Place in microvable dish and pour Soy Sauce over and in it I put aluminum foil on the tips of the legs and wings (its o.k. to do this) Depending on the size of the chicken I put it on for 30-35 mins baste every now and then with the soy sauce in the dish I picked this up in Hong Kong where I lived for a couple of years

A: Sure, you can make stuffing as a side dish in a casserole. Diced bread, chopped onion, celery, apples, sage & thyme. Add some chicken broth to moisten, lay chicken on top. Bake in 400F oven for 45-60 minutes.

Q: Does anybody have a good recipe for baking chicken in the oven or in a frying pan?
I am looking for recipes that call for skinless boneless chicken breast or chicken breast tenderloins. I am kind of picky when it comes to chicken and those are the only 2 cuts I like unless a whole chicken is roasted. Thanks,

A: Baked boneless chicken breasts: Marinate them in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with smashed potatoes, green beans and maybe some gravy. It is easy, fast and very tasty.

Q: I want to roast a chicken for dinner tonight in my convection oven.?
I have seen recipes/conversions that say roast at 425 degrees and others that say 325. Any good recommendations, etc. for the best way to do this?

A: I'm going to recommend the lower temperature. As you know convection cooks faster. But, if you want to brown it first. Cook it at 425 for 10-12 minutes, then turn it down to 325 for remainder of cooking time. You want it to remain moist. So lower is better. Enjoy.

I have a roasted chicken I cut up.. Also my oven is broken so is there a way of getting around this? Thanks

Q: Do you have any good chicken drumstick recipes? Could I make it like this.....?
We have been having drumsticks more frequently than other chicken lately because its cheaper. I've made chicken cacciatore baked in the oven (in a dish thing with a lid). My bf likes how the chicken goes nice and tender. I was wondering two things. 1) Could I make a white sauce (or should it be a cheese sauce) and cook the chicken in the oven like that?? Would that taste bad? 2) If I cook the chicken in a the same dish with lid, without any sauce. Will the chicken cook tender? Or will it dry out? Could I just cook it with some garlic and other herbs in there and make like roast chicken drumsticks?? Or would it be best if i'm going to cook it with no sauce, to just cook it on a baking tray? CASSEROLE DISH!! i forgot what it was called :) (experienced cook obviously heh)

A: You can bake the drumsitcks with honey and soya sauce and some chilli sauce, keep a lid on it and turn them frequently. Then just before removing sprinkle sesame seeds and roll them around in it. Roast for a further 5 min so the sesames toast. its really nice! YUM! PS: 2)- it will not dry out, though i would only put the garlic in halfway before finished cooking otherwise it might burn and go nasty.

I'm looking for a recipe that appeared in the guardian weekend magazine about a month ago.Basically you put a whole chicken in a pot and roast it in the oven with herbs veggies and potato chips all together.I can't find the mag.Many thanks.
